CHIANTI CLASSICO The term “Classico” refers to the original production areas or the Chianti PRODUCTION SITES: Chianti is the general name for many different specific wines: Classico, Colli Aretini, Colli Fiorentini, Colli Senesi, Colline Pisane, Montalbano, Rùfina e Montespertoli all produced in the territory protected by the DOCG (Controlled and Guaranteed Denomination of Origin - Denominazione di Origine Controllata e Garantita) regulation. This territory includes the provinces of Arezzo, Firenze, Pisa, Pistoia, Prato and Siena. COLOUR: Intense ruby-coloured with some garnet reflexes when aging. AROMA: A glass of Chianti gives off a rich bunch of flowers in which you can smell above all violet that is one of the predominant perfumes of Chianti. TASTE: The taste is rich but harmonic, dry, sapid and slightly tannic. It refines during its ageing. On the palate, there can be flavours of black cherry, beef, earth, oak, and vanilla. PAIRINGS: Chianti is excellent to be paired with the Tuscany cuisine flavours but it is suitable with a great variety of dishes. The new wine is perfect to sip with grilled red meat while the Riserva and the Superior version are more indicated to accompany game based dishes and mature cheeses. GRADATION: The minimum gradation is 12° and 12.5° for the Riserva version. SERVING TEMPERATURE: The ideal temperature of serving is between 16 and 18 °C. GLASS: We suggest using a tulip-shape glass (broad at the bottom and narrower at the top).
AGEING: Chianti Classico ages for a period of 7 months in oak barrels before bottling.
