POTATOES RICE AND MUSSELS (Patate riso e cozze)

INGREDIENTS:

1kg/2.2lb of mussels
400gr/14oz of rice
5 or 6 medium potatoes
3 medium onions
6 or 7 medium tomatoes
50gr/1.7oz of grated pecorino cheese
1 glove of garlic
Some parsley
1 rib of celery
Extra virgin olive oil
Salt and pepper
 
PREPARATION:

Wash really well the mussels under running water and rubbing the shells with a steel net. Open the shell with the specific knife and throw away the empty half.
Wash the potatoes and cut them into thick slices. Peel and slice the onions, mince parsley with celery and garlic.
Grease a baking tim with high edges, place onion, potatoes, the minced compound the rice and the mussels (the mollusk must be layed on the bottom). Dust with pecorino cheese and season with salt and pepper. Make just layers of onion, potatoes, minced compound, mussels, rice, etc. until the edge of the tin. On the last layer place slices of tomato and dust again with pecorino cheese, salt, pepper and olive oil.
At this point fill the tin with water and bake for 40 minutes in a preheated oven at about 180°C/356°F.
