Gilthead bream Apulia style recipe - Orata alla pugliese

 

GILTHEAD BREAM APULIA STYLE (Orata alla pugliese)

INGREDIENTS:
1 big sea bream (more or less 1kg/2.2lb)
50gr/1.7oz of grated pecorino cheese
4 potatoes
Some parsley
Olive oil
Garlic
Salt and pepper

PREPARATION:
Mince together the parsley and 2 cloves of garlic. Slice up the potatoes. Wash and clean the seam bream. Pour 5 or 6 tablespoons of extra virgin olive oil in a pyrex and dust it with the minced compound of parsley and garlic. Add half portion of potatoes and half portion of grated pecorino cheese.
Arrange the fish in the pyrex as well and add the remaining ingredients with a couple of spoons of olive oil.
Salt, pepper and place in a preheated oven at 200°C/ 392°F for 40 minutes.
During the baking move the pyrex to prevent fish and potatoes to stuck at the bottom.

Serve with some lemon juice and a good white wine.
