Bundle of pork loin and truffles recipe - Fagottini di maiale al tartufo

 
BUNDLE OF PORK LOIN WITH TRUFFLES
(Fagottini di maiale al tartufo)

INGREDIENTS:
400gr/14oz of pork loin
200gr/7oz of fontina cheese
2 eggs
1 small truffle
150gr/5.3oz of butter
Flour
Breadcrumbs
Salt, pepper
 
PREPARATION:
Slice thinly your pork loin and pound each slice with a meat pounder. Flour them. In the meantime beat eggs in a bowl with salt and pepper. Soak the slices of meat into it and then dry them in breadcrumbs (just one side).
Place slices of fontina cheese and slices of truffles onto the side non covered with breadcrumbs. Then place on it another slice of meat on the side with no breadcrumbs as to make a sandwich.
Melt some butter and when it is bubbling fry your sandwiches turning them once every so often until they are well gilded on both sides.
